Double Chocolate Meringue Pie

Recipe for Double Chocolate Meringue Pie

You will need one browned pie crust

1 1/2 cups Sugar
1/3 cup flour
1/4 teaspoon salt
2/ 1/2 cups milk
4 egg yolks
2 ounces unsweetened chocolate (bakers squares)
1 tablespoon and 1 and 1/2 teaspoons Cocoa (if you can split a half a tablespoon that would be fine).
1 tablespoon butter I like salted butter in everything!
1 teaspoon vanilla

 Step One


Shave Chocolate finely with a large knife Mix in the Cocoa.

The place in a separate sauce pan and add milk Heat slowly until the chocolate is melted and the cocoa is incorporated. But Do not boil!

Mix Sugar, Salt Flour together in a medium sauce pan Add milk to the dry ingredients along with the egg yolks, stirring well. Cook over medium heat stirring constantly until the mixture thickens and come to a boil. Reduce heat and boil for 2 minutes.

Removed from heat and add butter and vanilla stirring well.

Cover with plastic wrap to keep skin from forming when you prepare the meringue.

Make your favorite meringue.
I used 4 eggs whites and 1/3 cup of sugar and whipped it to foam then start adding the sugar slowly until you form stiff peaks.
Pour Chocolate into crust and add Meringue.
Bake at 350 Degrees and you should have this.

Lemon Meringue pie



Who does not like pie?? I will tell you I am loving pie but I have had to bump up the work out schedule to burn off the calories from the pies I am baking and sharing with you. But here is a finished pie to get you started.



I am going to try this recipe a little different this time.. Lots of pictures and directions.
Here is what you will need.
  8 tablespoons corn starch
1/4 teaspoon salt
1 cup sugar
2 cups water
3 egg divided yolks in one bowl and whites in the other
2 tablespoons butter
5 tablespoons lemon Juice, 
I used Meyers lemon extract by amaretti only three teaspoons were needed of this.
1/4 teaspoon cream of tarter
 One baked pie shell.
 
  Directions preheat oven to 400 degrees and bake off pie shell for 8 to 10 minutes.
  If you do not have a double boiler make one! 
A simple metal bowl will do over a small sauce pan
 Combine cornstarch, salt,1/2 cup sugar on top of a double boiler,
Stir in water slowly.
Place over boiling water stirring constantly until mixture thickens.

Cover with foil and cook for 10 minutes more stirring occasionally 
See how much thicker this is?

Add about three tablespoons of the hot sugar mixture one at a time to the egg mixture(1/2 cup of sugar combined with the egg yolks) Stirring each time to temper the eggs and keep them from curdling.

 
 Stir on the stove over boiling water for 2 minutes more.
Remove from heat and add lemon juice and butter. Stir until incorporated.
then cool to room temperature without stirring.

Make the meringue
Whip three egg whites and 1/4 teaspoon of cream of tarter to frothey.
gradually beat in 6 tablespoons sugar, beat the egg whites until they form stiff peaks.


Pour filling into baked pie crust.
 Top with meringue making sure to seal the edge of the pie all the way to the crust.
Bake at 400 degrees for about 8 to 10 minutes or until nice and brown.
 
 
Let cool then place in the refrigerator to serve cold.

Fudge Pie


Fudge Pie
This pie is SO good! Really easy!



1/2 cup butter
3(1 ounce) chocolate squares I used two semi sweet and one unsweetened by Bakers.
4 eggs
3 tablespoons light corn syrup with vanilla
1 1/2 cup granulated sugar
1/4 teaspoon salt
1 tsp vanilla extract or 1/4 to 1/2 teaspoon almond extract if you like.
1 (9") inch pie shell or homemade pie crust.

Method:
Preheat Oven to 400 degrees
Step One: in the microwave heat butter and chocolate for up to 4 minutes, heat one minute at a time and stir until melted and blended. Allow to cool slightly.

Step two: Beat in eggs, syrup, salt, sugar, and extract together. Then add chocolate mixture, and blend well.

Step Three: Pour into pie shell.

Step Four: Bake in the 400 degree oven for five minutes, then reduce the oven to 350 degrees and bake for 30 more minutes or until when shaken the pie is almost firm( it should jiggle a little) 
Serve cooled with whipped cream or a scoop of vanilla bean ice cream.

Buttermilk Pie



Okay so have you ever heard of a buttermilk pie? Well I will tell you it is the best of both worlds. It is like a custard pie without to much egg and it is rich evil deliciousness. I ate my first buttermilk pie when I was about 12. My mother went on a pie kick and this pie was a long time favorite of mine. The first one I made about 18 years ago did not set up and I stayed mad at it for about 18 years.
On my last trip to Little Rock my mother handed over the family recipes and I found this pie. 
So I decided I would make it again problem is my mother left a few things off of the recipe list and I just about had a heart attack! One was the buttermilk and the other was the flour. But we fixed that and here it is. 



2 cups sugar
3 eggs slightly beaten
4 tablespoons four
1 cup buttermilk
1 stick of butter
1 and 1/2 teaspoon vanilla extract.
One raw pie crust or if you like your favorite recipe of pie crust.

Method:
Preheat oven to 400 degrees
You will need one deep dish pie or two regular pie plates.

Step one: Cream sugar and butter and flour.
Step two: add eggs, vanilla mix, then add buttermilk. Mix until it comes together well.

Step three: Pour batter into pie crust.

Step Four: Bake for 5 minutes on 400 degrees

Step Five: reduce heat to 350 degree's and bake for 35 minutes or until a knife comes out almost clean and it does not jiggle much.

Serve warm or cool. If serving warm ice cream may be good with this pie.
