Sweet 16th for Quadruplets

Cakes By Shara was contacted on Monday of this past week to make quadruplets sweet sixteen cakes. We brought in another baker in town to help us make the cakes. Jo's custom cakes and catering we began work on Tuesday afternoon after we were paid and delivered 4 cakes on Saturday by 3:00 PM. What an amazing week it was!

Pear Chi Spice Galettes and Apple Chai Spice Galettes.

This little Rustic pies take no time at all. You can cheat if you cannot make good pie dough. This one has sliced Red pears, and Bartlet pears, I mixed sugar about 1/2 cup to some chai spice tossed the pears in that then I placed them in the middle of the rolled out pie dough and dotted it with about 10 small slices of salted butter. I folded up the edges of the pie dough and washed them with a egg wash. Baked at 400 degrees for about 25 minutes and OH MY GOODNESS! The spice was a perfect complement to the pears I chose with just enough sweet and spice. Enjoy!

Repeat with Apple only mix in half the sugar with brown sugar and chi spice. Repeat everything else. Both were so good!

I might be stuck on these for awhile. I bet you could use agave nectar as well to lower the sugar content. Happy Baking!

Twisted Tennessee Trifle. Layered with Chocolate Chili gananche, Raspberry Lava(spicy too) chocolate mousse, banana, butter crisps, short bread cookies and white chocolate mousse. This is for the SS get together this afternoon. Remember it is Spicy so children may not like it. I am addicted to Chili and sweet so this is my kind of yummy!
